SWEET AND SOUR DISH
I have combined the love of our family favorite crispy PORK BELLY with a childhood favorite flavor - SWEET AND SOUR.
If you’re following a low carb or keto diet, we all know sauces can be full of SUGAR, corn syrup and CARBS! Serve this sweet and sour dish over cauliflower rice or feel free to add more of your favorite low carb veggies for the ultimate take-out meal you can have at home!
INGREDIENTS:
1.5 to 2 pounds of meat of choice (I used pork belly)
1 white onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
FOR THE SAUCE:
1/2 cup sugarfree ketchup (I used ketoprimo - the cleanest and certified ketogenic) [use code: ketomommymell saves you $]
1/4 cup soy sauce or Bragg’s aminos
3 tbsp water (ok to even use 1/4 cup water)
2 tbsp apricot or orange jam/marmalade sugarfree
1 tbsp sweetener of choice (I prefer to use liquid sweetener so it dissolves nicely into the sauce vs. granular sweeteners)
3 tbsp white vinegar
2 tbsp apple cider vinegar (feel free to use 5 tablespoons of one vinegar if you do not have both)
1 tbsp garlic powder (I prefer to use powder so there are no chunks in the sauce- you can use fresh garlic or minced garlic if you prefer garlic bits in your sauce)
1 tsp minced ginger (I used minced ginger from a jar and it dissolves well in the sauce when heated)
optional - 1/4 tsp xanthan gum (a little goes a long way- this will help thicken the sauce)
DIRECTIONS:
Cook choice of meat - chicken, beef, pork, tofu. Feel free to coat or batter as you would calamari rings, honey walnut shrimp, or these chick-fil-a nuggets
Place to the side and dice bell peppers and onions.
Bring to simmer. Optional *add 1/4 tsp xanthan gum and stir until dissolved.
Turn off heat and add cooked meat/pork belly.
