An easy meal in 20 minutes! The longest part is cooking the chicken. You’re going to love this easy creamy peanut sauce. It’s low carb and can fit your keto, low carb, and sugarfree lifestyle. Serve it up with your favorite low carb noodles. Add more spice if you like your dishes spicy!

INGREDIENTS:

1 to 1.5 pounds of chicken (I prefer to use dark meat, chicken tenders or thighs will work best)

low carb noodles of choice (shirataki, konjac noodles work best to mimic the typical rice noodles that are commonly used in Asian dishes).
I used 2 packets from Amazing LoKarb (14oz total): each packet is 7oz.

Costco has Healthy Noodles you may be able to find at your local Costco. Otherwise, you can use noodles from Amazing LoKarb. Have the convenience of it shipped to your door from Amazon.

FOR THE SAUCE:

1/2 cup creamy peanut butter of choice (always watch out for added sugars in ingredients)

1/4 cup soy sauce or Bragg’s aminos

2 tbsp water

2 tbsp brown sugar alternative or sugarfree honey

1 tbsp apple cider vinegar

2 tbsp minced garlic

1/4 tsp minced ginger

1 tsp Thai Chili Paste - feel free to adjust and add more if you want more spice! I use Sambal Oelek Chili Paste.

1 tsp sesame oil

Combine peanut butter, aminos/soy, water, brown sugar alternative, apple cider vinegar, garlic, ginger, thai chili paste, and sesame oil in a small bowl.

Do not worry about the peanut butter not fully dissolving. Once it is heated up, all of the flavors and sauce mix up nicely.

Cook chicken in pan. I added some garlic powder for extra seasoning. You can omit this step as the peanut sauce will have plenty of flavor.

Once chicken is cooked, you can drain or leave as is. Add peanut sauce to pan. Wait for sauce to thicken and combine with the chicken. Add noodles and mix together. Seriously 20 minutes and it’s quicker than ordering and picking up or waiting for delivery ;)

Feel free to dress with green onions, cilantro and squeeze some lime all over. Add more Thai Chili paste if you want this dish spicier!
