LOW CARB BACON CHEESEBURGER CASSEROLE
This may look like any other kind of macaroni and cheese dish, but each bite tastes like a legit BURGER! I swear to you, it’s magical! This dish is good by itself (without the pasta), over broccoli/cauliflower, or over a low carb pasta alternative.
INGREDIENTS:
1 lb ground beef
1/2 chopped onion
5oz bacon crumbles (I use the bacon crumbles from Costco- it saves some time vs. cooking bacon and dicing them).
5oz cream cheese
2 tbsp minced garlic - more for me is always best
2 tbsp sugarfree ketchup
2 tbsp yellow mustard
2 tbsp Worcestershire sauce
shredded cheddar cheese or cheese of your choice for burgers - I didn’t measure how much cheese to put, but you can control how much you want to top your casserole dish with.
IF USING PASTA: (omit the following ingredients if making casserole dish over low carb veggies or if eating by itself)
4oz dry low carb pasta of choice - I used Great Low Carb macaroni elbows (4oz. is half of the package)
2 eggs
1/4 cup heavy whipping cream
1 tsp garlic salt
The eggs and heavy whipping cream will help bind everything together.
DIRECTIONS:
Cook ground beef and add bacon crumbles.
Add onions and garlic.
Once the meat has been sauteed with onions and garlic add the cream cheese, ketchup, mustard, and Worcestershire sauce. Continue mixing and stirring.
Cook pasta as directed. Drain pasta.
Slowly combine pasta and heavy whipping cream/egg mixture. Then add everything in a casserole dish. Top with shredded cheese.
Bake at 400F for 15 minutes or until cheese has melted to your liking.
