JALAPENO BISCUIT CASSEROLE

When you’re a cheese lover, beef lover and a jalapeno lover… you upgrade the typical jalapeno popper or jalapeno dip to make it a biscuit casserole dish!

My hubby said this dish reminded him of a Shepherd’s Pie even though I’ve never had a Shepherd’s Pie. Lately, I’ve been into casserole dishes, and I’m definitely adding this one to my favorites, along with my Bacon Cheeseburger Casserole dish!

This dish is super easy to assemble! I think it took me longer to slice and gut out the seeds of the jalapenos. If you can handle the heat, you can easily just slice them up and keep the seeds on them.

INGREDIENTS:

1 package of HighKeySnacks biscuit mix *

1 1/2 cups of shredded cheese - I used a shredded Mexican Blend

1/4 cup mayonnaise

1/4 cup sour cream

4 jalapenos- sliced (seeds gutted if you don’t want too much heat)

1/2 an onion (diced)

Taco seasoning of your choice *

Ground beef *


For this recipe I used a little under 1 pound of cooked ground beef and seasoned the ground beef with taco seasonings. If you are using a packet of taco seasoning, it’s suggested to use the whole packet of taco seasoning for 1 pound of ground beef.

DIRECTIONS:

  1. Prepare and cook biscuits as directed on packaging. Set aside to cool once baked.

    The biscuit mix I used can make about 12 biscuits. I portioned out 6 biscuits for this meal and kept the other 6 to eat by itself for sides the family could enjoy.

2. Cook and Season ground beef. Set to the side.

3. Mix sour cream, mayonnaise, half of the diced up onions, and 1/2 cup of shredded cheese in a small bowl. *optional to add additional taco seasonings

4. Add cooked ground beef on top of already baked biscuits

5. Add sour cream and mayonnaise mixture on top

6. Add sliced jalapenos and remaining 1/2 portion of the diced onions

7. Add remaining 1 cup of shredded cheese on top for final layer

8. Bake at 350F for 10 minutes or until cheese is melted
