LANGOSTINO MAC AND CHEESE

If you aren’t a seafood person, you are more than welcome to omit the langostino!

Feel free to add bacon or just make a traditional mac and cheese dish.

Mac and cheese spells out COMFORT FOOD. Originally, I was going to use fancy cheeses but I opted to just choose cheeses that you can easily find at the grocery store or in bulk at Costco. I’ve always believed, it’s best to use what you have at home or what you use on the daily.

I’m so happy how this turned out! My the sister-in-law said this tasted like something you’d order at a restaurant (Restaurant Quality)

INGREDIENTS:

1 package of Great Low Carb Pasta Elbows (8oz bag)

1 cup heavy whipping cream

2 oz. cream cheese

3 tsp butter

1 tsp dried parsley flakes

1 tsp garlic powder

1/2 tsp paprika

salt and pepper to taste

1 cup shredded mozzarella cheese

2 cups shredded Mexican blend cheese- you can use cheddar cheese or cheddar jack cheese.

8oz cooked Langostino or seafood of choice. *1/4 cup cooked bacon or bacon bits will work in place of Langostino

TOPPINGS:

1/4 cup crushed pork rinds or pork panko

1/4 cup grated Parmesan cheese

melted butter

DIRECTIONS:

1. Cook pasta as directed, drain and set aside.

2. Cook/Warm Langostino, drain and set aside.

3. Combine in a small sauce pan over low heat:

heavy whipping cream, cream cheese, 1 tsp of butter, parsley flakes, garlic powder, paprika, salt, pepper, and the 3 cups of your choice of cheese blend. Mix slowly and continue stirring until all cheese is melted.

4. Add cooked macaroni elbows to a casserole dish. I used a 2.2 qt/2 L Pyrex dish.

5. Add cheese sauce and mix with macaroni elbows.

6. Add in Langostino (or protein of choice), continue to mix.

FOR TOPPING:

7. Sprinkle grated parmesean cheese

8. Use 2 tsp of melted butter and mix with the 1/4 cup pork rinds to create little clumps and spread over macaroni cheese. *Optional: add additional dry pork rinds to spread.

9. Bake at 350F for 20 minutes
