HONEY WALNUT SHRIMP
INGREDIENTS:
1 pound of shrimp
2 oz. walnuts
1 egg
1 cup of pork rind crumbs
optional: green onions to top
MAYO MIXTURE:
1/2 cup mayo
2 tbsp sugar free honey substitute
1 tbsp liquid sweetener (can use granular but liquid is for ease of mixing)
2 tbsp heavy whipping cream
DIRECTIONS:
Beat egg in separate bowl. Egg wash, coat, and fry shrimp in avocado or coconut oil. This process is similar to how I prepared ‘Coconut Shrimp’- see process video.
I have also tried this recipe in the air fryer! Instead of a full on pork rind crumb coating I’ve also added isopure whey protein isolate to the pork rind crumbs to give it more of that “batter “ coating. A good 1:1 ratio (1/2 cup pork rinds: 1/2 cup whey protein isolate) works great!
In a different frying pan, prepare to make candied walnuts:
Add 2oz. of walnuts to heated pan. Drizzle sugar free honey substitute over walnuts. They honey will harden as the pan heats up so continue stirring and mixing. Place walnuts to the side.
In a small bowl, make the mayo mixture. Mix all ‘mayo mixture’ ingredients making sure they are completely mixed.
Fold the mayo mixture and walnuts in with the fried shrimp.
Serve over cauliflower rice or make your own cauliflower fried rice to make you own Chinese Take out at home! Enjoy!
