COCONUT SHRIMP
INGREDIENTS:
1 lb peeled shrimp- tail on makes it easier to grab for frying
1 egg
1 cup pork rinds
1 cup unsweetened flaked coconut (used a brand that was 2g nget carbs for 2 tbsp)
Additional seasonings to taste:
-Redmondlife garlic pepper
-Redmondlife realsalt
-Any brown sugar substitute
DIRECTIONS:
Mix pork rinds, coconut flakes, and seasonings in a large bowl.
Beat egg in separate bowl. Egg wash, coat, and fry in avocado or coconut oil.
