KETO TIRAMISU
What is Tiramisu?
Tiramisu is an Italian dessert consisting of layers of ladyfingers (sponge cake) soaked in coffee and brandy or liqueur with powdered chocolate and mascarpone cheese.
I’ll be honest… I don’t really care for or even like tiramisu.
I know when you’re at a restaurant and the waiter mentions, “We have our special tiramisu for dessert,” everyone seems to go “OoOOoooh and AhhhHHh!” Well, Not me!
I can’t stand a mushy/spongy texture which is why I’ve never cared for real tiramisu. Although I love booze, I’m not a big fan of liquor chocolates. When I want something chocolatey, traditional tiramisu isn’t chocolatey enough for me.
I am a LAZY BAKER. For this recipe I used all ketofriendly pre-packaged stuff and assembled it to make an easy NO BAKE ketofied dessert.
We all know you can’t have real ‘ladyfingers’ on keto, so I used HighKeySnacks Snickerdoodle cookies. I even spruced it up with some of their mini chocolate chip cookies too! The mini cookies act as an awesome ladyfingers substitute.
INGREDIENTS:
*adapted recipe was taken from Simply Delish Vanilla Pudding box
3 cups heavy whipping cream
2 packages of HighKeySnacks cookies (snickerdoodle flavor- can use chocolate chip cookies)
4oz (1 cup) of strong coffee- I used Folgers instant coffee and used 2 heaping tbsp to pour into the 4 oz. water
1 tbsp vanilla extract
1 package of Simply Delish Vanilla pudding
cocoa powder- instead of the regular cocoa powder I used Rogue Keto caffeinated Chocolate powder
DIRECTIONS
Make instant coffee: use lukewarm water to help dissolve the instant coffee mix [2 heaping tbsp to 4 oz coffee]
2. Blend heavy whipping cream with package of vanilla pudding and vanilla extract. I used a Ninja Bullet- blend until it becomes thick.
8. Refrigerate and let set for 1 hour before serving.
