KETO DONUTS

Donuts! Oh how I’ve missed you! Donuts have been one thing I feel that’s hard to “keto-fy" or copycat without it tasting too much like cake.

A lot of the ingredients used for this recipe are staples that are usually stocked in any keto/low carb pantry.

What I love about this donut base is that you can make them plain, or add other flavorings (like chocolate, ube, pandan, coconut, etc.) and dress them up to make them fun! Top them off with sugarfree spinkles and bring back some childhood memories or get the kids excited about all the fun colors they are eating!

INGREDIENTS:

1 1/4 cup almond flour

1/3 cup powdered (confectioners) sugar

2 eggs

1/4 tsp salt

1 tsp baking powder

1 tsp vanilla extract

2 tbsp melted butter

1/4 cup unsweetened almond milk

DIRECTIONS:

Mix all ingredients together.

Grease donut pan with coconut oil spray or olive/avocado oil spray. Place mixture in donut mold pan.

Bake at 350F for 15 minutes. Oven times may vary, so I suggest to check at 10-12 minutes. Make sure fork/toothpick comes out clean to make sure donuts are fully baked.

GLAZE:

FOR PLAIN GLAZE:

1/4 cup powdered sugar

3 tbsp heavy whipping cream

use hand mixer or you can blend in a Ninja Bullet

FOR CHOCOLATE GLAZE:

1/4 cup powdered sugar

1 tbsp cocoa powder

1 tbsp heavy whipping cream

1/4 tsp vanilla extract

1.5 tbsp water
