BUTTER CREAM FROSTING
I frost majority of my cakes/desserts with this simple and light buttercream frosting using my favorite sugar free chocolate from Choczero.
INGREDIENTS:
8 tbsp butter (1 stick of butter)
3/4 cup of sugarfree chocolate or (4 oz)
You can easily half this recipe if you want a smaller batch of frosting or save the other half for another yummy treat! The recipe above easily frosts a boxed cake mix or 9-10 cupcakes.
DIRECTIONS:
Melt the stick of butter and chocolate in a glass bowl in a microwave at 20 second intervals 2-3 times (or until melted; be careful to not overheat).
Once melted, mix the butter and chocolate together and place in the refrigerator for 1-2 hours or until hardened.
Once hardened, use a hand mixer to get frosting consistency.
Here is another variation if you do not have sugarfree chocolate on hand.

8 tbsp butter (1 stick room temperature butter)
1/2 tsp vanilla extract
1 tbsp heavy whipping cream
1/4 cup powdered sugar alternative/confectioners sugar
