STUFFED CRUST PIZZA
Stuffed Crust is a cheese lover’s delight! Now you can eat your crust first!
Pre-keto and low carb, my favorite kind of pizza was always getting a “Stuffed Crust” pizza from Pizza Hut. It’s gone away and come back. Now, we can always have it!
You have pizza you can enjoy with all the toppings and “cheesy breadsticks” (stuffed crust) with no more wasted crust!
You can make your own stuffed crust at home using fathead dough (scroll down to see how to make pizza with fathead dough). If you aren’t into fathead dough, you can make this family approved pizza and kid friendly pizza with a Flatbread baking mix from KetoandCo.
What is fathead dough? Fathead dough is low carb and keto dough that’s also gluten free! It’s made with mozzarella, egg, low carb flour like almond flour or coconut flour, and sometimes uses cream cheese. In this recipe, I did not use cream cheese. I preferred it without cream cheese so it doesn’t feel too sticky and mushy. Fathead dough can also be used to make bagels.
INGREDIENTS FOR FATHEAD DOUGH:
10oz mozzarella cheese
5oz almond flour
1 egg
1 tsp baking powder
Melted butter and grated parmesean to brush on top of crust
DIRECTIONS FOR FATHEAD DOUGH PIZZA:
Melt mozzarella cheese in microwave 3-4 times at 30 second intervals until melted and blended together.
Add almond flour, eggs, baking powder, and mix. Don’t be afraid to get your hands dirty.
Assemble pizza and add toppings of your choice. For my fathead dough pizza, I assemble and bake everything all at once. No need to ensure crust is properly cooked before adding cheese.
Bake at 350F for 30 minutes.

For the sauce, I like using Rao’s Homemade Marinara sauce or Victoria’s Marinara sauce. These are the lowest of sugared sauces you can find. I’ve found them at Walmart, Safeway, Target, and Costco.
You can also use shredded cheese for your stuffed crust or mozzarella sticks. Use whatever you have on hand.
