BAKED BACON CHEESEBURGER MEATBALLS
CHEESEBURGER BOMBS!
Here is a spin on my Low Carb Bacon Cheeseburger Casserole dish. If you don’t have pasta on hand, you can turn these into MEATBALLS or better yet- turn these into burger patties!
I turned these into bite-sized treats to get that yummy bacon cheeseburger taste in every bite! A great way to stay low carb/keto and feed your family and friends!
INGREDIENTS:
1 lb ground beef
1/2 chopped onion
5oz bacon crumbles (I use the bacon crumbles from Costco- it saves some time vs. cooking bacon and dicing them). If you don’t have crumbs- feel free to chop up slices of uncooked bacon into the mix.
5oz cream cheese
2 tbsp minced garlic - more for me is always best
2 tbsp sugarfree ketchup
2 tbsp yellow mustard
2 tbsp Worcestershire sauce
shredded cheddar cheese or cheese of your choice for burgers - I didn’t measure how much cheese to put, but you can control how much you want to top your casserole dish with.
2 eggs
2 cups Pork Panko pork rind crumbs
DIRECTIONS:
Mix all ingredients above together (minus the Pork Panko ).
Roll up meat mixture into a ‘meatball shape’ about 1-1.5” wide.
Roll meatballs into the bowl full of pork rind crumbs to get a nice coating.
Place coated meatballs on parchment paper.
Bake at 400F for 15 minutes.
